I really love making my own Thanksgiving dinner for my family because it means lots of leftovers for the next few days. I make a huge turkey for my family of five, and 4 lbs of stuffing so leftovers are certainly abundant!
We normally eat the same meal at least twice, and then I like to be a little creative and use up the last of my large meal to make Thanksgiving Leftover Casserole.
Thanksgiving is all about the side dishes! Besides my favorite – Sweet Potato Casserole with Marshmallows & Pecans, my homemade stuffing comes in at a very close second!
I just love combining stuffing, mashed potatoes and cranberry sauce with a bite of turkey because the flavors are so harmonious!
How to Make Thanksgiving Leftover Casserole
Have you ever tried Thanksgiving Casserole? It is a great way to love your leftovers and enjoy another hot and tasty meal without much fuss. The good news is that it’s super easy!
With the addition of some shredded cheese, and mayonnaise, you can have another tasty and hearty meal with the flavors of Thanksgiving all in one bite!
Here are the ingredients you’ll need to make Thanksgiving Leftover Casserole:
- 4 cups leftover prepared stuffing, divided
- 4 cups shredded leftover cooked turkey (about 1 lb.)
- 3/4 cup mayonnaise
- 1/4 cup whole berry cranberry sauce
- 2 cups leftover mashed potatoes
- 1 1/2 cups shredded mozzarella cheese
Directions:
- Preheat oven to 375°.
- Spray a casserole dish with non-stick spray.
- Spoon in 2 cups stuffing, then top with turkey.
- Combine 1/4 cup of mayonnaise with cranberry sauce; evenly spread over turkey.
- Combine remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey.
- Top with remaining 2 cups stuffing.
- Bake 40 minutes or until heated through.
- Let stand 10 minutes before serving.

Ingredients
- 4 cups leftover stuffing
- 4 cups turkey shredded
- 3/4 cup mayonnaise
- 1/4 cup whole berry cranberry sauce
- 2 cups mashed potatoes
- 1 1/2 cups shredded mozzarella cheese
Instructions
Preheat oven to 375F.
Prepare a casserole dish by spraying it with non-stick spray.
Spoon in 2 cups of the stuffing into casserole dish.
Top with the shredded turkey.
In a separate bowl, combine 1/4 cup of mayonnaise and cranberry sauce.
Add the cranberry sauce and mayonnaise mixture to the top of the turkey.
Combine remaining 1/2 cup Mayonnaise, mashed potatoes and shreaded cheese in large bowl.
Add evenly to the top of everything in the casserole dish.
Evenly spoon in the remaining 2 cups of stuffing over the top of everything.
Bake for 40 minutes or until heated thoroughly.
Let stand 10 minutes before serving.

I have made a casserole out of the leftovers, when I don’t eat all of my favorite leftovers first. But, I’ve never included the cranberries in it, it sounds good!
